If you remove the unfinished stories from the sprint then every sprint looks like it has finished with 100% of the stories completed, which isn’t true.

Understanding how many stories a team had committed to and then how many they completed is a valuable piece of information that allows you to make adjustments to your process. This is hidden if you only see completed stories.
