I like the concept, although, as you state, a food truck does miss some of the core elements of other food related services, so I’m wondering whether it actually makes it a valid test.
Can you test food in a truck and get a result and then convert it to fine dining food? The testing audience and the consuming audience might be completely different user groups, which surely invalidates your testing?
(I know we’re talking analogies here, but the query still stands)
